Sweet Potato Fries

This recipe is really easy:

Quality olive oil
One large sweet potato (or more if you want)
Pepper
Salt

Preheat oven to 350. Cut the sweet potato in half and then the halves in half. Then cut fries that are about 1/2" to 3/4" thick. Arrange them onto a baking sheet. Drizzle with olive oil, sprinkle with salt and lots of pepper. then toss with your hands so they are all coated evenly. It is better to start with a little olive oil and add more if you need it. After tossing, arrange them so they are not touching each other on the baking sheet. Then put them in the oven for 15 minutes. When done, turn them over and put them back in for 10 more minutes. Voila!

Those times make the fries dark and crispy. I shortened the time a little on each side so they weren't as dark and crispy. It just depends how you like them. Expirament!

Couldn't be happier!

Today was a blog day. I didn't have to work today so Greg and I got up around 8:30am, ate a nice liesurely breakfast consisting of cereal for me, and blueberry eggos for greg. Then, we went to the gym and worked out for a little bit. Then we came home, took a shower, got ready, and had an innovative lunch. Greg has been wanting to get some sweat pants for a while now to lounge around in, and now that it is turning colder I suggested we go to target and look for some. Greg didn't know it, but secretly I was thinking that maybe I can get him to try on some other cute clothes while we were there. So we get to Target and look for sweat pants and the selection was pretty measley (sp?). But they did happen to have some cute clothes just as I suspected. So, I started wandering around in the mens section and Greg followed behind. I suggested some jeans he could try on and he actually liked them, saying "well I was just thinking I need some new jeans". We looked around some more and he said "well..... I do need another work shirt." Inside I smiled because my plan was working. I mean, we all know Greg, this is a MIRACLE!!!!!!! Then he says "but this isn't in the budget." And I say smiling, "yeah it is." (I'm the one that does the budget). So he finally catches on and says "was this your plan all along, to get me to buy some new clothes??" "yep," I say. We both laughed. We ended up getting some new jeans, a polo shirt, a sweater, and a long sleeved shirt.... and for only $58. Not bad eh? It was so fun to dress him up :) :) We drove home and Greg put on his new outfit: jeans, polo shirt w/ sweater over it, and new shoes we got him from DSW a couple weeks ago. He loves it!!!!

Then before Greg had to leave for work he called ESRI, a company in Redlands, California that wants to interview Greg. Finally he got ahold of the guy and he has a phone interview set for next week!!!!! We are so happy about this because we would love to move there! We are not getting our hopes up but it's a possibility.

So Greg left to go to work, and I decided to go to Bed, Bath, & Beyond just for fun since we still have gift cards from our wedding and tons of those huge blue 20% off coupon things.....and I haven't been shopping (besides for groceries) in a long time. I was in heaven walking around the store looking at everything. I decided to get a tablecloth and some nice napkins, which can be used for sunday dinners and holidays. It was very convenient because they had the dishes we got for our wedding on display so I could see how it would look with them. The tablecloth and napkins are a dark maroon color and very pretty. I'm excited about my purchase. On my way home I stopped at rite aid to get some long over due mascara, eye liner, and face lotion.

When I got home I made dinner, and it was soooooooo good. I tried a new recipe, sweet potato fries. I love trying new recipes (especially when they are delicious). If anyone wants the recipe let me know, they are made in the oven, not fried. Then I got a call from Greg on his dinner break. It was nice to talk to him and he excited to try the sweet potato fries tomorrow for his lunch. So anyway.............. now I am going to make the grocery shopping list.

Yup, this was definitely a blog day!

Hey everyone! We have a blog!!!! I don't know how good I'll be at updating this, but I thought it would be a fun thing to try out. I'm not even really sure how to do anything on our blog yet. Anyway, here is an update on our lives.......

We live in Virginia, and I'm working part time at a shoe store. Greg is working for the NGA and at the moment is going through training. We are nursery teachers in our ward for the junior nursery and it is really fun! Kids are so cute. In our spare time, which we have little of, we enjoy bike riding, longboarding, eating at subway, going on little jogs, hanging out on the roof of our apartment building, watching netflicks movies, listening to mormon channel, reading good books, checking out the museums around here, taking rides on the metro, and just chillin.

We are really excited for our trip out to Utah to see everyone and go to Brad and Connie's wedding! We miss everyone!!!

As for the future........
Our plan for our lives is always changing. We are hoping to move next fall after Greg finishes his training. He will still be working for the NGA but in a different location (aka cheaper location). Then, after a year of that, Greg can get his masters degree, with the NGA paying for it. We are hoping to move closer to home after that.

That's if for now... more to come!
