Sweet Potato Fries

This recipe is really easy:

Quality olive oil
One large sweet potato (or more if you want)
Pepper
Salt

Preheat oven to 350. Cut the sweet potato in half and then the halves in half. Then cut fries that are about 1/2" to 3/4" thick. Arrange them onto a baking sheet. Drizzle with olive oil, sprinkle with salt and lots of pepper. then toss with your hands so they are all coated evenly. It is better to start with a little olive oil and add more if you need it. After tossing, arrange them so they are not touching each other on the baking sheet. Then put them in the oven for 15 minutes. When done, turn them over and put them back in for 10 more minutes. Voila!

Those times make the fries dark and crispy. I shortened the time a little on each side so they weren't as dark and crispy. It just depends how you like them. Expirament!

  1. I've made sweet potato fries with paprika and a touch of cinnamon. I recommend it...delicious! And then add a side of fry sauce.
